Mashed Potato Stuffed Meatloaf a Family Favorite!

INGREDIENTS for 12 meatloaf cups

  • 1 lb potato, cooked and peeled

  • 2 tablespoons butter (I prefer Kerry Gold Brand) use unsalted for this recipe.

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 1/2 cup shredded parmesan cheese

  • 1 cup of milk

  • 1 Bottle of Your Favorite BBQ Sauce! I used Bucees BBQ Sauce for this recipe.

  • 1 tablespoon cooking oil

  • 1 cup onion, diced

  • 1 tablespoon garlic, minced

  • 1 lb ground turkey or beef, 85%/15% fat

  • 1 teaspoon worcestershire sauce

  • ¼ cup fresh parsley or desired amount

  • 1 egg

  • ½ cup of Stove Top Stuffing


INSTRUCTIONS:

  1. Preheat oven to 350˚F

  2. Place cooked potatoes into a large bowl. Add butter I love the Kerry gold Butter, salt, pepper, parmesan, and a splash of milk. Mash and add more milk gradually until the potatoes are the desired texture. Set aside and let cool.

  3. Add oil in a skillet over medium heat I prefer using avocado oil and saute your diced onions and garlic. Cook until onions are soft. Set aside in a bowl to cool before adding to the meat mixture.

  4. In a large bowl, combine ground beef, salt, pepper, worcestershire sauce, parmesan, parsley, cooled onions garlic, egg, and your 1/2 a cup of stove top then mix.

  5. Using a spoon or ice cream scooper, scoop the meat mixture and place into a greased 12 cup cupcake baking tin.

  6. Using your fingers, spread the meat from the center to make a cup. Fill the middle with a small spoonful of mashed potatoes, and cover back up over the meat mixture like you are basically forming a ball with the mashed potatoes in the canter.

  7. Generously brush half of your BBQ Sauce on top of the meatloaf cups then add the rest half through baking.

  8. Bake for 25 minutes, reapplying the BBQ Sauce halfway.

  9. Add some fresh Parsley on Top before Serving!

  10. Enjoy!
