Low Carb PIZZA Casserole!

INGREDIENTS:

  • 1 large cauliflower head chopped into approx. 1 inch in sizes. You can also use (1) 16 oz bag of frozen cauliflower if you would like instead.

  • 2 tbsps. of avocado oil

  • 2 tsps. or more of Italian Seasoning

  • 1/2 tsp. of Himalayan Salt and Black Pepper or desired amount

  • 1 1/2 cups of Marinara Sauce. I used Primal Kitchen Tomato Basil Marinara Sauce as seen in picture below.

  • 2 cups of Mozzarella Cheese you can also add cheddar or another favorite cheese as well.

  • Pepperoni Slices. Enough to cover your entire dish. Approx. 2-4 oz.

DIRECTIONS:

  1. Preheat the oven to 425 degrees.

  2. In a 9x13 casserole dish, toss the cauliflower with avocado oil, Italian seasoning, Himalayan Salt, and Black Pepper. Arrange evenly in the casserole dish in a single layer after seasoning.

  3. Roast cauliflower in the oven for about 25-35 minutes until tender and lightly golden brown.

  4. Low you will layer your Low Carb Pizza Casserole. Pour the marinara sauce evenly over the cauliflower. then sprinkle with shredded cheese as the next layer, and the final layer you will place pepperoni slices on top evenly all over casserole dish as seen in picture below.

  5. Place the casserole dish back in the oven for 10-15 minutes, until the cheese is melted. Towards the end of baking I will set to broil for 2-5 minutes until cheese is a light crispy brown.

  6. Remove from oven and ENJOY your Low Carb Pizza Casserole Dish!
