Ingredients:
1 small to medium head of cauliflower
2 Tbs of Kerry Gold Butter
1/2 cup heavy whipping cream
3/4 tsp sea salt or hymilylan salt for taste (or desired amount)
1/4 tsp black pepper
2 cups of shredded sharp cheddar cheese
Optional toppings:
Green Onions
Crispy Bacon
Shrimp
Eggs over easy
Fresh Parsley
Directions:
Cut the cauliflower into quarters then place in a food processor or blender. Blend until it resembles rice/grits texture.
Place the cauliflower rice in a medium pot over high heat. Boil until softens then drain.
Add back in cauliflower into a pan add in your butter, heavy cream, cheese, salt, and pepper. Continue to taste to see if you would like to add more salt and cheese. I love adding more butter and cheese until I get the desired taste of my keto friendly grits.
Now you can plate and add your desired toppings!
