1 cucumber, diced
½ cup feta cheese, crumbled
2 1/2 tablespoons fresh mint, chopped, plus additional for garnish
2 teaspoons olive oil or avocado oil
Cut the watermelon into 1 ½ -2 inch cubes, removing the rind.
Using a teaspoon measuring spoon or a grapefruit spoon, scoop out the center of each watermelon cube, only going a little less than halfway through.
In a large bowl, combine all your ingredients minus additional watermelon .
Take the mixture of the crumbled feta, freshly chopped mint, avocado oil, and oregano and fill the center of each watermelon cube..
Garnish each watermelon cube with a mint leaf. Chill until serving.
