Watermelon Feta Cucumber Salad

  • Seedless watermelon

  • 1 cucumber, diced

  • ½ cup feta cheese, crumbled

  • 2 1/2 tablespoons fresh mint, chopped, plus additional for garnish

  • 2 teaspoons olive oil or avocado oil

  • Oregano


  1. Cut the watermelon into 1 ½ -2 inch cubes, removing the rind.

  2. Using a teaspoon measuring spoon or a grapefruit spoon, scoop out the center of each watermelon cube, only going a little less than halfway through.

  3. In a large bowl, combine all your ingredients minus additional watermelon .

  4. Take the mixture of the crumbled feta, freshly chopped mint, avocado oil, and oregano and fill the center of each watermelon cube..

  5. Garnish each watermelon cube with a mint leaf. Chill until serving.

  6. Enjoy!
