Ingredients:
Chaffle Fries:
You will need a waffle Iron!
2 cups of grated mozzarella cheese or more depending how cheesy you want it. Note: Have some additional cheese on reserve because you are going to do need that.
2 eggs
1 cup of cooked cauliflower rice. I put some cauliflower in a food processor then boiled it to make it easier.
salt and pepper to taste
Gravy:
1 cup chicken broth
1 tbsp nutritional yeast
1 tbsp of kerrygold butter
1 tbsp of Soy Sauce
Onion powder and Himalayan Salt for taste
To Thicken Gravy you will need:
1/2 Cup of organic chicken broth
1/2 tsp xanthan gum
Topping for your Poutine
About 1-2 cups of cheese curds. I purchased 2 x 5oz bags of cheese curds for mine and that was plenty for my recipe.
Instructions:
Combine all your chaffle fries ingredients into a bowl and mix well!
Heat up waffle maker!
Sprinkle some of your reserved grated cheese on your hot ready to use waffle maker.
Spread your chaffle (cauliflower cheese mixture) onto your waffle maker and spread evenly with spatula. You should have enough chaffle batter for 4-6 waffles depending on the size of your waffle maker..
Sprinkle top of waffle with additional grated cheese before closing.
Sprinkle a little bit more salt if you would like.
Close lid and cook until very crispy!
Gravy:
1. Blend 1/2 cup broth and 1/2 tsp xanthan gum in small blender or you can whisk it very fast until thickened
2. In a pot, combine the rest of the gravy ingredients and heat until it simmers then add your gravy thickener combine and whisk until a smooth gravy texture.
How to Plate: 1. Cut Chaffle Fries into sticks and pile onto a plate. 2. Layer cheese curds on top. 3. Finally Pour hot gravy on top!
