16 lasagna noodles
4 lbs ground turkey
1 finely chopped large onion
1 teaspoon salt
½ teaspoon pepper
2 jars of your favorite marinara sauce
30 oz ricotta cheese
3 cups fresh baby spinach
1 tablespoon italian seasoning
3 cup shredded mozzarella cheese
1 cup shredded parmesan cheese
Cook lasagna noodles
Saute onions In a skillet over medium heat then add ground turkey until fully cooked.
Add your italian seasoning and spinach with 1 jar of your favorite marinara sauce, and let simmer. Remove from heat.
In a bowl, combine ricotta, Italian seasoning, and 1 egg.
Spread the ricotta mixture over each lasagna noodle evenly, then spread the meat mixture on top of that. Roll up tightly and place in a casserole dish.
Preheat oven to 350°F
Take second jar of marinara sauce and pour over lasagna roll ups.,cover tightly with aluminum foil, and bake for 40 minutes.
Uncover, and top with mozzarella and parmesan. Broil an additional 5 minutes or until cheese is melted to your preference.
